Take An Exciting Cooking Class Where You Will Learn How to Make Traditional Dishes From Start to Finish!

Prepare, cook and enjoy the results of a variety of southern Mexican dishes during this 3 ½ hours cooking class in Huatulco. Receive instructions (in English!) on how to make some of the region's most flavorful dishes and learn tips and techniques for recreating them at home. Once you're through whipping up a delightful meal with others, sit down and savor the fruits of your culinary creations.

Here we recreate my mom's original shrimp cacerolle, it's a big seller at Alfredo's, and our family favorite, the starter will be a fish ceviche call Tiritas, a simple yes delicious dish, tostadas are a must with these food,

Mmmm, tacos, there’s nothing more Mexican than tacos and Margaritas, in this class we’ll create a selection of tacos for any taste and palate, with options from chicken, carne asada, fish, and shrimp with homemade corn tortillas, to complement we’ll prepare delicious margaritas from scratch, in this class we’ll get you ready for you to host an authentic Mexican fiesta!

SPICY PASSION-CHILES RELLENOS
One of the most festive dishes in Mexican cuisine is the star of this class. You’ll learn the techniques necessary to create perfect Chiles Rellenos. To complement this festive dish, we’ll make Chicken Tinga and Beef Picadillo, stuffed roasted poblanos & jalapeños.

COSTA (SEAFOOD)
Oaxaca’s coastline provides amazing seafood. We’ll create a ceviche with freshly caught fish, and a shrimp stuffed avocado which could be your next starter back home. The main dish on this menu will be the grilled catch-of-the-day with a guajillo pepper sauce as a perfect marinade for the Pescado a la Talla,

OAXACA

MI COCINA
In this class we take the approach of “what’s cooking in the kitchens of Mexico” We’ll prepare delicious dishes based on the “three sisters” and Huitlacoche, which was once a royal food, as we create a feast of classic Mexican favorites that are always present in any respectful cocina. These include refried beans, red and green salsas, guacamole, hand-made tortillas, quesadillas with epazote, sopes, and empanadas.

HOLY MOLE!!
That’s the expression that will come out of your mouth when we finish the most complex dish in Cocina Oaxaqueña, “El Mole Negro” or Black Mole. Close to thirty ingredients are cut, roasted, fried, boiled, blanched, peeled, deveined, mashed, and ground to create the most embraced Mexican sauce. We’ll also make the more everyday yellow mole which is not as complex.

TAMALES
Both happy and sad celebrations used to call for important dishes such as Tamales. We’ll assemble and create the best Verde de Puerco and Yellow Mole with Chicken made from scratch to stuff out tamales wrapped in corn husks and banana leaves.

This class was created upon frequent request to learn the recipe of the famous Shrimp Stuffed Pineapple found in beach restaurants in Huatulco; the best-selling starter at Alfredo’s, the Jalapeño Poppers, and the sexy Passion Fruit Ceviche.

EVENING TACOS & MEZCAL TOUR
On this tour of downtown Crucecita will go to “my guy” to taste some amazing artisanal mezcal, you’ll learn how to drink it, the process of production, the history and the benefits of this ancestral spirit, and snacks will be provided; then we’ll walk to a cantina to have a real bar Mexican experience, have refreshments and try the botana we’ll be served, the next stop will be at a street taqueria to sample traditional night tacos, our last stop will be alfredo’s for a nightcap or hit the dance floor if there’s a band playing.
